From 15 – 19 March, La Mar Miami’s Chef Jean-Paul Fung to Host Peruvian Cuisine Popup Menu at Iconic Caribbean Resort
Mandarin Oriental, Canouan, a serene retreat set amidst the pristine beauty of St. Vincent and The Grenadines, is delighted to announce an exclusive culinary collaboration with La Mar by Gastón Acurio, the acclaimed Peruvian restaurant at Mandarin Oriental, Miami. Taking place from 15 – 19 March 2025, this limited-time pop-up is part of the resort’s commitment to elevate its dining scene by welcoming illustrious chefs from across the globe.
As part of this immersive gastronomic experience, Jean-Paul Fung, Executive Sous Chef at La Mar, will present an exceptional multi-course dining experience at Tides Bar + Grill, expertly paired with a selection of South American wines. Guests will embark on a culinary journey that celebrates the rich culinary flavors of the Grenadines, coupled with La Mar Miami’s signature Peruvian cuisine – deeply influenced by Japanese, Chinese, Spanish, Italian and Andean traditions. With a shared commitment to sustainability and environmental stewardship, both Mandarin Oriental, Canouan and La Mar prioritize sourcing ingredients from local fishermen and farmers, ensuring a fresh and authentic dining experience that honors both land and sea.
The menu will feature a selection of cebiches, including Chalaco, made with grouper, shrimp, octopus, sweet potato, choclo, cancha, onions, and spicy rocoto leche de tigre. Guests can also enjoy tiraditos like the Lujoso, featuring hamachi, blue crab chalaca, avocado, smoked trout roe, radish, roasted peppers, and confit vegetable leche de tigre, and appetizers such as the Quinoa Caprese, a delicate combination of burrata, baby heirloom tomatoes, quinoa, and ají amarillo dressing, as well as Conchitas Oka, showcasing diver scallops, 24-month aged parmesan cheese foam, lime, and garlic crumbs. The main courses highlight the bold flavors of Peru with signature dishes such as Lomo Saltado and Arroz con Mariscos and Achupado, a hearty seafood dish with bucatini noodles, grouper, calamari, octopus, shrimp in chupe sauce, huacatay, and rocoto aioli. To round out the experience, a selection of desserts will be available, catering to both sweet and savory palates.
